Eggplant Casserole



Prep time: ten minutes |Cooking time: 20 minutes |Servings: 8 

Ingredients: 
3 eggplants, chopped  
1 white onion, chopped  
1 bell pepper, chopped  
1 turnip, chopped
1 teaspoon salt  
1 teaspoon ground black pepper  
1 teaspoon red pepper cayenne  
½ teaspoon white pepper  
1 cup cream  
5 oz Parmesan, grated  

Directions:  
Mix up together white onion, bell pepper, and turnip. Add salt, ground black pepper, red pepper cayenne, and white pepper. In the cooker place eggplants. Then add the layers of onion mixture. Add cheese and cream. Close and seal the lid. Cook the casserole for ten mins on High-pressure mode.Then make quick pressure release. Chill the meal till the room temperature.
